Tunisian Standard NT 52.01 (2003) applies to preserved and semipreserved food for human consumption, whether held with a view to sale, marketed or sold, regardless of its origin. Tunisian Standard NT 52.02 (2005) applies to processed tomato concentrates. Tunisian Standard NT 52.07(2005) defines the characteristics and requirements for preserved peppers commonly known as "harissa".
